Besani Roti is a traditional dish in India and Pakistan. This is usually served with the chutney and lassi in rural areas. However, people like to eat this besani roti in urban areas too. Ingredients for Besani Roti:
Besan (Gram Flour) 2 cups
Wheat Flour 2 cups
Red Chili flakes ½ tsp
Salt ½ tsp
Onion (Finely Chopped) 1 medium sized
Fresh Coriander (Finely Chopped) ¼ cup
Fresh Mint (Finely Chopped) ¼ cup
Green Chilies (Finely Chopped) 2-3
Cumin Seeds crushed 1 tsp
Coriander Seeds crushed 1 tsp
Oil To fry
Water For kneading the dough
Ingredients for Green Chatni:
Fresh Coriander 1 bunch
Green Chilies 8 – 10
Cumin Seeds 1 tsp
Salt 1 tsp
Garlic 4-5 cloves
Ingredients for Mint Chatni:
Fresh Mint 1 bunch
Fresh or Dried Red Chilies 10 – 12
Salt 1 tsp
Garlic 4-5 cloves
Tamarind pulp ½ cup
Cumin Seeds 1 tsp
Ingredients for Saltish Lassi:
Milk ½ Kg
Yogurt ½ Kg
Salt 1 tsp
Ice As required
Method for Besani Roti:
Take Besan and wheat flour in a large bowl. Add salt, red chili flakes, crushed cumin and coriander seeds, finely chopped onion, mint, fresh coriander and green chilies into the flour. Mix all the dry ingredients very well. Add some water and knead soft and smooth dough. Cover it with a wet cloth or a cling sheet for 30 minutes. Make 6 equal and small balls with this dough and roll them out on a flat surface to a size of 6 inches. Heat up a flat pan and carefully put the chapatti over the pan. Allow it cook for a minute and then turn over.
Apply some Ghee or butter on chapatti to make it more delicious and crispy. You will see now small brown spots forming on chapatti. Turn it over and repeat the process to cook the both sides properly. Besani Roti is ready to serve now. Remove it from the pan and repeat the process with the remaining dough balls.
Method for Green Chatni:
Put Fresh Coriander, Green Chilies, Garlic Cloves, Cumin Seeds and Salt into a blender. Add ½ cup of water.
Grind it so that a thick paste can form. Yummy green chutney is ready to serve.
Method for Mint Chatni:
Add fresh mint, red chilies, salt, garlic cloves and cumin seeds into a blender. Add ½ cup of water. Grind it to make a thick paste. Now mix it well with tamarind pulp. Spicy and sour mint chutney is ready to serve.
Method for Lassi:
Add milk, yogurt and salt into a blender. Add ice as required. Blend it well. Saltish Lassi is ready to serve with Besani Roti.
Serving Besani Roti:
Serve the Besani Roti hot with Green Chatni, Mint Chatni, Yogurt and Lassi.
