This Chocolate Almonds cake has a unique and amazing taste. It has a great combination of chocolate and roasted almonds. It is soft and fluffy and can be served with tea in the evening or at breakfast. Chocolate Almonds Cake is the all-time favorite cake of my family and friends. I usually try this on birthday parties. Roasted almonds enhance its taste and make it more yummy and delicious. You can decorate this chocolate almonds cake with fresh cream and roasted almonds. I also used chocolate balls and canned cherries to make it more attractive and tasteful.

Ingredients for Cake Sponge:
All-Purpose Flour ¾ cup
Powdered Sugar ½ cup
Melted Butter ½ cup
Baking Powder 1 tsp
Baking Soda ½ tsp
Cocoa Powder 3 tbsp.
Vanilla Essence 1 tsp
Milk ½ cup
Cake Sponge Recipe:
Preheat the oven to 350 degrees. Butter a pan and set aside. Whisk together ground sugar and melted butter to make a white fluffy batter. Now add three whole eggs and again beat well. Mix all dry ingredients i.e. all-purpose flour, baking soda, baking powder and cocoa powder and sift them over at least two times by using a sieve. Now add into the eggs batter and fold in slowly. Take half cup of milk and add 1 tsp vanilla essence in it. Now add it into the cake batter to bring a smooth consistency. Pour the batter into the pan. Bake in the oven for 25 – 30 minutes or until a toothpick inserted in the center comes out clean. Cake sponge is ready.
Ingredients for Topping:
Whipped Cream 2 Cups
Cocoa Powder 2 tbsp.
Vanilla Essence 1 tsp
Roasted Sliced Almonds ½ Cup
Sugar Coffee Syrup 1 Cup
Chocolate Balls 8
Canned Cherries 9
Chocolate Almonds Cake Decoration:
Roasted Almonds Preparation:
Take ½ cup almonds and boil them at least for 20 minutes. Now peel them off and make thin slices with the help of a sharp knife. Heat up a frying pan with 1 tbsp. oil in it. Add almond slices and roast till light golden in color.
Sugar Coffee Syrup Preparation:
Take one cup of water and add 4 tbsp. sugar and 1 tsp. coffee in it. Now simmer it on low heat for 4 – 5 minutes to dissolve sugar and coffee grains. Keep it aside to cool down on room temperature.
Assembling the Chocolate Almonds Cake:
Slice the Cake Sponge into 2 layers of equal thickness. Now moisten the cake halves with the sugar and coffee syrup to make it wet and soft. Take chilled whipped cream (not frozen) and beat it until it becomes fluffy. Add vanilla essence and cocoa powder and mix well. Now apply whipped cream over one slice and cover it with another. Cover the cake sponge completely from outside with the whipped cream. Level the cream with a knife.
Now sprinkle roasted and sliced almonds all over the cake. Decorate the top with chocolate balls and canned cherries.
