Gajrela – Carrot Pudding

Gajrela is a very famous carrot dessert in Asian countries like Pakistan and India. This is prepared with milk and also known as Carrot Pudding. This amazing dessert is easy to make at home with few ingredients. Mostly Gajrela is made during winters when fresh carrots are in season. People use khoya and fresh cream to make it more healthy and delicious. Dry fruits are used for garnishing and also for enhancing the taste of this sweet dish. Almonds, Coconut, Pistachio and Raisins make this dessert more attractive, eye catching and tempting. Walnuts and Cashew nuts can also be used. Some people also use gold and silver warq for the decoration. This dessert has a Kheer (Rice and Milk Pudding) like texture and served chilled.

Gajar Ka Halwa (Carrot Dessert) is also a variation of Gajrela. But Gajar ka Halwa is prepared without adding milk. This is the main difference between these two desserts. Gajar ka halwa is also a main sweet dish in winters. It is served on weddings and happy occasions. Carrots have amazing taste and are used to make delicious desserts like carrot cakes, pudding and other sweets. Here, we are going to share an easy recipe of Gajrela. Ingredients for Gajrela:

Milk                                                                                                  1 Kg

Carrots (Grated)                                                                            1 Kg

Cardamom Powder                                                                       1 tsp

Sugar                                                                                               250 Grams

Almonds (Chopped)                                                                      ½ cup

Kewra Water (Screw pine Essence)                                           2 tbsp

Coconut (Crushed)                                                                        ½ cup

Pistachios (Chopped)                                                                    ½ cup

Khoya (Reduced Dry Milk)                                                           1 cup

Raisins                                                                                             ¼ cup

Method:

Take a cooking pan and boil milk in it. Now add grated carrots into the milk. Also add cardamom powder. Let it cook over the low flame until carrots become tender, milk reduces to half and Gajrela turns its color to light orange. Now add sugar and raisins. Cook for 4 – 5 minutes while stirring to dissolve the sugar. In the end, add kewra water, almonds, pistachios, coconut and khoya. Mix it well. Pour it into a bowl and garnish with the almonds, pistachios and coconut. Gajrela is ready to serve hot or chilled.
