Gol Gappay are very famous in Pakistan and India. They are served as a snack. They are light, crispy, and hollow from inside. These ball like crunchy gol gappas are served with sour and spicy water, yogurt and boiled chick peas. It is a fast food that is easily available in markets and restaurants. Ingredients for Gol Gappay:
Semolina (Suji) 1 Cup
Baking Soda 1 tsp
White Flour 2 tbsp
Boiled Chick Peas 1 Cup
Mint Leaves ½ Cup
Oil for Frying
Chili Powder 1 tsp
Tamarind Pulp ½ Cup
Roasted Coriander Powder 1 tsp
Water 1 Liter
Black Salt 2 tsp
Roasted Cumin Powder 1 tsp
Green Chilies 2 – 3
Ginger Powder 1 tsp
To Prepare Sour Water:
For Sour water, blend mint leaves, green chilies and tamarind pulp in a blender to make a fine paste. Now mix water, roasted cumin powder, roasted coriander powder, ginger powder, black salt and red chili powder. It is better to make the water more sour and spicy. Strain the water properly and place it inside the refrigerator to chill.
To Make Gol Gappay:
In a bowl mix together Suji (Semolina), Flour, Baking Soda and knead stiff dough with warm water. Keep the dough aside for 30 minutes and then knead it again. Roll out the dough into a thin sheet. Then cut gol gappa size small circles by using a round cutter. Cover them with a wet cloth and leave aside at least for 10 minutes. Deep fry gol gappas on medium heat until they puff up and become like a ball in shape.
Serving Gol Gappay:
Make a hole inside the Gol gappa with your thumb tip. Put some boiled chick peas in it and fill it with the sour water before eating.
