Nan Khatai is a traditional most favorite bakery item of Pakistani and Indian people. Making Nan Khatai is very easy and it takes almost no time in the preparation. It requires only few ingredients to cook them at home. All ingredients are very inexpensive and can easily be available in market. Usually people love to eat nan khatai on tea time or on the breakfast. It has low calories and good for people who are conscious about their dieting and eating schedules. Nan Khatai has a crispy biscuit like texture. It has a unique flavor of almonds or pistachio. You can make it with lots of variations like people also love to make zafrani (Saffron) nan khatai. Ingredients:
All- Purpose Flour 2 cups
Clarified Butter (Ghee) ¾ cup
Semolina (Suji) ¼ cup
Baking Powder ½ tsp
Baking Soda ½ tsp
Cardamom Powder ½ tsp
Sugar Grinded ¾ cup
Egg yolk for Brushing 1

Nan Khatai Method:
Take a bowl and mix well clarified butter and sugar to make a fluffy white batter. Now add Semolina and All-Purpose Flour gradually while mixing. Also add baking powder, baking soda and cardamom powder. Make smooth dough and keep it inside refrigerator for 10 minutes. Now make small 1-1/2 inch balls of it. Press these balls with hand to give them a Nan khatai shape. Brush the top side with beaten egg yolk. You can also place an almond or pistachio in the center. Put them on a greased baking tray while keeping 1 inch distance in between each Nan Khatai. Bake them for 20 minutes in a pre-heated oven at 180 degree centigrade. Now keep them on room temperature at least for an hour to cool down. Serve when cooled. You can also store them in an air tight container.
