For Urad Dal Dahi Vada:

Urad dal (White Lentil)                          1 Cup

Corn Flour                                                 1 tbsp

Salt                                                             1 tsp

Crushed Red Chili                                     1 tsp

Baking Soda                                             ½ tsp

Ginger Paste                                             1 tsp

Asafetida (Heeng)                                    1 pinch

For Yogurt Mixture:

Yogurt                                                        ½ Kg

Crushed Red Chili                                    1 tsp

Salt                                                            1 tsp

Red Chili Powder                                      ½ tsp

Corn Flour                                                 1 tbsp

Roasted Cumin Seeds Powder                1 tbsp

Garlic paste                                               1 tbsp

Method to Make Urad Dal Dahi Vada:

First of all, soak Urad dal in water for about an hour. Now grind it with ½ cup of water. Consistency of the Urad dal should be thick and fluffy. It should not be runny or liquidy. Now add Corn Flour, Salt, Crushed Red Chili, Baking Soda, Ginger Paste, and Asafetida (Heeng). Mix this batter very well and keep it aside for around an hour.

Now prepare yogurt. Take yogurt in a large bowl and mix all spice in it such as Crushed Red Chili, Salt, Red Chili Powder, Corn Flour, Roasted Cumin Seeds Powder and Garlic paste. Mix properly as keep it aside.

Take a flat surface frying pan and heat up some oil to shallow fry the vadas. Now pour 2 tbsp dahi vada batter in the center of the pan and give it a round shape. The thickness of the vada should not be more than ½ inch. Let it cook on medium flame until it turns light golden brown. Now turn it over and cook from the other side. Once, the urad dal vada is cooked properly, just soak it in the water for 10 – 15 minutes. When it becomes soft and spongy then take it out from the water and squeeze all the water with your palms. Now transfer it into the yogurt mixture. Repeat this process to make around 6 – 8 vadas. The number of vadas depends on the quantity of urad dal mixture and the size of the vadas you make.
