Blueberry Cake

Blueberry Cake has a unique flavor with the tempting fragrance of blueberries. For preparing this cake, first we make a delicious blueberry sauce. You can prepare this sauce at home or can even buy this from a grocery store. Blueberry cake is layered with juicy blueberries sauce and fresh whipped cream. Usually, I made this cake for my friends and family as they like its sweet and tangy flavor so much. The super moist sponge enhances the flavor of blueberry cake. You can make single, double or more than two layers of blueberry sauce to make it more delicious and tempting.

Ingredients for Cake Sponge:

All-Purpose Flour                 1 cup

Castor Sugar                          ½ cup

Melted Butter                       ½ cup

Eggs                                        3

Baking Powder                     1 tsp

Baking Soda                           ½ tsp

Vanilla Essence                     1 tsp

Milk                                        ½ cup

Cake Sponge Recipe:

Preheat the oven to 350 degrees. Butter a pan and set aside. Whisk together sugar and melted butter to make a white fluffy batter. Now add three whole eggs and again beat well. Mix all dry ingredients i.e. all-purpose flour, baking soda and baking powder and sift them over at least two times by using a sieve. Now add into the eggs batter and fold in slowly. Take half cup of milk and add 1 tsp vanilla essence in it. Now add it into the cake batter to bring a smooth consistency. Pour the batter into the pan. Bake in the oven for 25 – 30 minutes or until a toothpick inserted in the center comes out clean. Cake sponge is ready.

Ingredients for Blueberry Sauce:

Blueberries           3 cups

Water                     1 cup

Sugar                      ½ cup

Corn Starch           1-1/2 tbsp. dissolved in 3 tbsp. water

Vanilla Essence     ½ tsp

Blueberry Sauce Recipe:

Take a saucepan and put 1-1/2 cup blueberries in it. Add water, sugar and vanilla essence and cook over medium flame to bring one boil. Add dissolved corn starch and bring to a rolling boil. Now turn the flame down and cook for 2 – 3 minutes until sauce reaches a consistency like honey. Turn off heat and add remaining blueberries and stir slowly. Keep it aside to cool down at room temperature.

Ingredients for Topping:

Whipped Cream                                   2 Cups

Blueberry Sauce                                  2 Cups

Sugar Syrup                                           1 Cup

Sugar Syrup Preparation:

Take one cup of water and add 4 tbsp. sugar in it. Now simmer it on low heat for 4 – 5 minutes to dissolve sugar. Keep it aside to cool down at room temperature.

Assembling the Blueberry Cake:

Slice the Cake Sponge into 2 layers of equal thickness. Now moisten the cake halves with the sugar syrup to make it wet and soft. Take chilled whipped cream (not frozen) and beat it until it becomes fluffy. Now apply whipped cream over one slice, apply blueberry sauce on it and cover it with another. Cover the cake sponge completely from outside with the whipped cream. Level the cream with a knife. Now drizzle remaining blueberry sauce over the cake. Blueberry cake is ready to serve. You can also keep it inside the refrigerator for 10 – 15 minutes before serving.
