Ingredients (4 Rolls):
For Paratha:
All Purpose Flour 2 Cups
Salt ½ tsp
Water to knead a dough
Oil to fry
For Chicken Malai Boti:
Boneless Chicken Cubes 500 grams
Fresh Cream ½ Cup
Mayonnaise ¼ Cup
Black Pepper ½ tsp
White Pepper ½ tsp
Salt ½ tsp
Lemon Juice 1 tbsp
Green Chili Paste 1 tsp
Fresh Coriander Paste 1 tbsp
Ginger Garlic Paste 1 tbsp
Cumin Powder 1 tsp
Garam Masala Powder ½ tsp
Oil ¼ Cup
Charcoal 1 piece
For Stuffing:
Tomato Chopped 1
Capsicum Chopped 1
Onion thinly Sliced 1
Cucumber Sliced 1
Mayonnaise ¼ Cup
Cheddar Cheese ½ Cup
Mozzarella Cheese ½ Cup
Tamarind Chatni ¼ Cup
Method:
For Making Parathas:
Take a large bowl and mix all-purpose flour and salt in it. Now add water slowly and keep mixing with your hands. Knead a smooth but non sticky dough for parathas. Cover it with a wet cloth and keep it aside for 15 to 20 minutes.
Now Make 4 small balls out of it. Roll out each ball on a flat surface to make a thin chapati. Heat up a flat skillet and cook chapati on it from both sides until it gets small brown marks. Now add 1 tbsp oil and fry from both sides until it becomes light golden brown in color. Repeat this process to make all four parathas.
For Chicken Malai Boti:
Take a frying pan and heat up some oil in it. Now add ginger garlic paste and fry for 1 – 2 minutes. Add chicken cubes and keep stirring. Cook these boneless chicken cubes for almost 5 – 6 minutes until they become white in color. Now add Black Pepper, White Pepper, Salt, Lemon Juice, Green Chili Paste, Fresh Coriander Paste, Cumin Powder and Garam Masala Powder. Add ¼ cup of water, mix properly and keep cooking for another 6 – 8 minutes until all spices are cooked well.
In the end, add fresh cream and mayonnaise in the chicken, mix well and turn off the heat. Now burn charcoal and place it inside the chicken malai boti pan on a bread or chapati piece. Drizzle some oil over it and quickly cover the lid so that smoke doesn’t come out. Leave it as it is for at least 5 minutes. It will give chicken malai boti a smoky and barbecue aroma. Chicken Malai Boti is ready to stuff into the rolls.
Assembling Chicken Malai Boti Paratha Rolls:
Take a paratha and place it over a flat surface. Now place 2 – 3 tbsp of Chicken Malai Boti in the center. Drizzle some mayonnaise and Tamarind chatni also. Now make a layer of chopped and sliced cucumber, onion, capsicum and tomato. In the end, sprinkle some shredded cheddar and mozzarella cheese over it. Wrap the roll in a way that it is sealed from all sides. Repeat this process to make all four rolls. Chicken Malai Boti Paratha Rolls are ready to serve.
