Who is not familiar with this amazing traditional dish called Biryani. Biryani is the most favorite main course of almost every Pakistani. People love to make this delicious dish on important occasions like Eid, wedding ceremonies, birthday parties and on dinner parties. The most amazing thing about Biryani is, you can make it with a range of variations. There are many versions of Biryani like Chicken biryani, Beef biryani, Mutton biryani, Fish biryani, Prawn biryani, Nali biryani, Vegetable biryani, Pulao biryani, Masala biryani, Chana biryani, beef tikka biryani and the most delicious Chicken tikka biryani. Today, we are going to make Chicken tikka biryani with our unique recipe. This is a type of barbecued chicken tikka layered with biryani rice.
Chicken Tikka biryani has a Smokey and Barbecue flavor. It is a tasteful creation which will introduce you a unique and the most delicious taste of biryani. Let’s start making this delightful recipe.
Ingredients for Rice:
Rice 1 Kg (Soaked in water for 30 minutes before cooking)
Oil 1 cup
Cloves 8 – 10
Black pepper corns 10 – 12
Cinnamon Sticks 5 – 6 (1 inch in size)
Black Cardamom 4 – 5
Green Cardamom 6 – 7
Cumin Seeds 1 tsp
Black Cumin Seeds 1 tsp
Bay Leaves 3 – 4
Star anise 5 – 6
Javitri (mace) 5 – 6
Onion Chopped 2 medium
Ginger Paste 1 tbsp.
Garlic Paste 1 tbsp.
Yogurt 1 cup
Chicken Stock 2 cups
Salt 2 tbsp.
Ingredients for Chicken Tikka:
Chicken Leg Piece 8
Yogurt 1 cup
Red Chili Powder 2 tbsp.
Red Chili Flakes 1 tbsp.
Turmeric 1 tsp.
Coriander Powder 1 tbsp.
Salt 1 tbsp.
Cumin Seeds Powder 1 tbsp.
Coriander Powder 1 tbsp.
Garam Masala Powder 1 tsp.
Lemon Juice ¼ cup
Orange Food Color 1 tsp.
Ginger Paste 1 tbsp.
Garlic Paste 1 tbsp.
Oil ½ cup
Charcoal piece 2 inch piece
Ingredients for Garnishing:
Fresh Coriander (Chopped) ½ cup
Fresh Mint Leaves ½ cup
Green Chilies 10 -12
Biryani Essence 1 tsp.
Kewra Water 1 tbsp.
Orange Food Color Liquid 2 tsp
Fried Onion ½ cup
Lemon (Thin Slices) 1
Chicken Tikka Preparation:
Take Chicken Leg pieces and make 3 – 4 diagonal cuts on each piece with knife. Now mix all spices together i.e. Yogurt, Red Chili Powder, Red Chili Flakes, Turmeric, Coriander Powder, Salt, Seeds Powder, Coriander Powder, Garam Masala Powder, Lemon Juice, Orange Food Color, Ginger Paste, Garlic Paste and Oil. Apply the thick paste of all spices on Chicken pieces. Keep them aside for 3 – 4 hours to marinate.
Now take a deep wok and place all marinated chicken pieces in it. Cover the lid and cook it over medium low flame for 30 minutes. Chicken and yogurt will release enough water for cooking. Turn the flame off when chicken becomes tender and water dries. For Smokey flavor, burn a charcoal piece and place it inside the chicken tikka wok on a piece of bread. Now drizzle some oil over the charcoal and quickly cover the lid. Leave it like this for 4 – 5 minutes. Barbecued Chicken tikka is ready for biryani.
Method to Prepare Rice:
Take a deep cooking pan and heat up some oil. Now add Cloves, Black pepper corns, Cinnamon Sticks, Black Cardamom, Green Cardamom, Cumin Seeds, Black Cumin Seeds, Bay Leaves , Star anise and Javitri (mace). Fry it for 1 – 2 minutes while stirring. Now add chopped onion and fry on medium flame till translucent in color. Also add ginger and garlic paste and fry for 1 – 2 minutes. In the end, add salt and yogurt and cook on medium flame for 4 – 5 minutes. Keep mixing gradually to avoid from burning. Drain water from the soaked rice and add them into the cooked masala. Add 2 cups of chicken stock and 1 glass water to boil rice. Cook on medium flame. Rice should not be too soft otherwise they will break up. Now turn off the heat and place them aside.
Chicken Tikka Biryani Final Steps:
Take a large wok and drizzle some oil in the bottom. Now make a layer of cooked rice and place barbecued chicken tikka over the rice layer and also pour chicken tikka masala over it. Make a second layer of cooked rice so that the chicken tikka is sandwiched between the two rice layers. In the end, sprinkle fresh coriander, mint leaves and fried onion on the top. Also put lemon slices and green chilies. Drizzle few drops of biryani essence, kewra water and orange food color. Now cover the lid and cook it on low flame for at least 15 minutes. Rice will absorb the taste of barbecued chicken tikka and all flavors will combine together to develop a unique taste of Chicken tikka biryani. Now turn the heat off. Serve it hot with Yogurt Raita and Salad.
