Colorful Chinese Fried Rice Recipe

Chinese fried rice is a dish that goes with many Chinese dishes such as Manchurian, Shashlik, Chicken Chili, Beef Chili Dry, Garlic Shrimp, Lemon Chicken, Sweet, and Sour Chicken and Kung Pao Chicken. You can serve Chinese fried rice with all these delicious gravies. This is a colourful rice dish which is a combination of crunchy vegetables with long grain rice. You can make these delicious rice at home in a very short time. I will recommend using fresh vegetables to make this dish. Do not use frozen or canned vegetables otherwise they will become soft and soggy. Let’s make these colourful rice with easy steps.

Long grain rice                                            1.5 Kg

Spring Onion (finely chopped)                1 cup

Carrot    (julienne / finely chopped)       1 cup

Corn Seeds (boiled)                                   1 cup

Peas (half boiled)                                       1 cup

Cabbage (julienne)                                    2 cups

Eggs                                                              2

Black pepper                                               1 tbsp

Salt                                                               1 tbsp

Vinegar                                                       ½ cup

Soya Sauce                                                ½ cup

Crushed red chili                                     1 tsp

Ginger paste                                             1 tbsp

Garlic paste                                              1 tbsp

Oil                                                              1 cup

Chinese Fried Rice Method:

First of all, half boil the long grain rice and drain the excess water. Also, add some salt while boiling. Now heat up some oil in a wok and add ginger and garlic paste. Fry for 2 minutes and then add all the vegetables except the spring onion. Stir fry on high flame for 3 – 4 minutes. Keep in mind that vegetables should remain crunchy and colorful. Do not overcook them. Now beat the egg and fry it separately in a pan. Cut the egg into thin small strips and add it into the fried vegetables. Also, add half boiled rice and mix them well.

Now add the spices i.e. salt, black pepper, vinegar, and crushed chili. Stir fry the rice on medium-high flame for 4 – 5 minutes. Now add spring onion and mix well. Also, pour ½ cup of water over the rice and cover the lid. Cook the rice on low flame for 8 – 10 minutes. Colorful Chinese fried rice are ready to eat. Enjoy them hot with all Chinese gravies.
