Pineapple Cake

Everyone is familiar with the pineapple cake. It has a refreshing flavor of sweet and juicy pineapples. This the most basic cake in all cream cake categories. It is easy to make and it takes not more than one hour to make it. You can enhance the flavor and look of this delicious cake by adding some cherries on top. I also sprinkle some shredded coconut on it that makes it more tempting. Let’s make this delightful recipe by following these steps.

Ingredients for Cake Sponge:

All-Purpose Flour           1 cup
Castor Sugar                    ½ cup
Melted Butter                  ½ cup
Eggs                                   3
Baking Powder                 1 tsp
Baking Soda                       ½ tsp
Milk                                     ½ cup
Pineapple Essence            1 tsp

Pineapple Cake Sponge Recipe:

Preheat the oven to 350 degrees. Butter a pan and set aside. Whisk together sugar and melted butter to make a white fluffy batter. Now add three whole eggs and again beat well. Mix all dry ingredients i.e. all-purpose flour, baking soda and baking powder and sift them over at least two times by using a sieve. Now add into the eggs batter and fold in slowly. Take half cup of milk and add 1 tsp pineapple essence in it. Now add it into the pineapple cake batter to bring a smooth consistency. Pour the batter into the pan. Bake in the oven for 25 – 30 minutes or until a toothpick inserted in the center comes out clean. Pineapple Cake sponge is ready.

Ingredients for Topping:

Whipped Cream                2 Cups
Pineapple Slices                 1 Cups
Sugar Syrup                       1 Cup
Shredded Coconut             ½ Cup
Cherries                              6 – 8
Yellow Food Color             2 – 3 drops

Pineapple Cake Decoration:

Slice the Cake Sponge into 2 layers of equal thickness. Now moisten the cake halves with the sugar syrup to make it wet and soft. Take chilled whipped cream (not frozen) and beat it until it becomes fluffy. Now apply whipped cream over one slice, put pineapple chunks to make a layer and cover it with another cake sponge slice. Cover the cake sponge completely from outside with the whipped cream. Level the cream with a knife. Now fill a piping bag with whipped cream and decorate the cake nicely.

Put some pineapple chunks and cherries over it. Now take shredded coconut into a bowl and add few drops of yellow food color. Rub the coconut with your hands to color it nicely. Now cover the cake sides with the yellow colored shredded coconut. Pineapple cake is ready to serve. Keep it inside the refrigerator for 15 – 20 minutes before serving.
