SHAHI TUKRAY/BREAD PUDDING

Shahi tukray is a traditional dessert. It is usually made on Eid and other happy occasions. It is prepared with milk and bread and very easy to make. Shahi Tukray is a shahi or royal dish. It is full of khoya, mewa (dried fruits) and fresh cream. You can make this dish with any type of bread. Cut the bread pieces in your desired shape (square, rectangle or diagonal) and put it inside the cardamom flavored milk.

All other ingredients that are used for garnishing are optional. People also use gold or silver warq for decorating the dish. Normally, these gold and silver warqs are not available easily and they are much expensive. But they are edible and make this royal dessert more attractive and tempting. Shahi Tukray INGREDIENTS:

Bread Slices                                                                                    8

Milk                                                                                                  ½ Kg

Pistachio                                                                                         8 – 10

Khoya (Reduced Dry Milk)                                                           1 cup

Kewra Water / Screwpine essence                                           1 tsp

Zafran / Saffron                                                                             1 pinch

Cardamom                                                                                      3 – 4

Sugar                                                                                               1 Cup

Chandi Ka Warq (Silver Leaf)                                                      3 – 4

Ghee (Clarified Butter)                                                                 as required

METHOD:

Remove bread slice corners and cut each slice into four diagonal pieces. Heat up clarified butter in a pan and fry bread slices till they become light golden brown in color. Take the slices out from the pan and add crushed cardamoms in the clarified butter. Fry for a minute. Now add milk and sugar. Cook it till sugar dissolves. Add Kewra water and Saffron and cook for 2-3 minutes. Now put fried bread slices into the milk and turn off the heat. Cover the lid and keep it aside for 4-5 minutes so that bread can absorb the milk. Sprinkle khoya over the bread slices. Now apply silver leaf (chandi ka warq) on the bread slices. Garnish with crushed pistachio nuts. You can serve it either warm or chilled.
