Special Shahi Beef Biryani Recipe

Biryani is an Asian meat and rice dish which is commonly associated with the Muslims of the Indian subcontinent. This insanely popular dish can be cooked with a number of variations. It is made with rice, meat and spices. Any form of meat can be used to cook biryani. Such as beef, mutton, chicken, seafood like fish and prawns, eggs and even vegetables. People from different regions make biryani in different ways. Everyone has a unique method of making this mouth-watering rice dish. Today, I am going to reveal my secret recipe for Special Shahi Beef Biryani. I bet if you follow all steps accurately, you will fall in love with this finger-licking special shahi beef biryani. Let’s start with the ingredients.


For Boiled Rice:

Rice (Sella)                                             750 grams (Soak them in water for an hour)

Water                                                      to boil rice

Ginger Paste                                         1 tsp

Garlic Paste                                          1 tsp

Green Chili Paste                                1 tbsp

Fresh Coriander Paste                       2 tbsp

Mint Paste                                           2 tbsp

Fresh Curry Leaves Paste                1 tbsp

Knorr Pulao Cubes                           2

Onion (medium)                               1 (Thinly sliced)

Green Cardamom                             3 – 4

Black Cardamom                              3 – 4

Cinnamon                                          2 – 3 small pieces

Bay Leaves                                        2 – 3

Curry Leaves                                    8 – 10

Cloves                                                5 – 6

Black Peppercorns                         8 – 10

Javitri (Mace)                                 2 – 3 flowers (crushed in small pieces)

Black Cumin Seeds                       ½ tsp

White Cumin Seeds                     ½ tsp

Fennel Seeds Powder                  1 tbsp

Coriander Seeds Powder            1 tbsp

Salt                                                  1 tbsp

Oil                                                    1 cup

For Beef Masala Curry:

Beef with bones                            1 kg

Water                                              to cook meat

Onion (Medium)                          1 (sliced)

Onion (Medium)                          1 (sliced and fried to golden brown)

Ginger Paste                                  1 tsp

Garlic Paste                                   1 tsp

Oil                                                   1 cup

Salt                                                 1 tsp

Chili Powder                                3 tsp

Chili Flakes                                  1 tsp

Coriander Powder                      1 tsp

Turmeric Powder                       ½ tsp

Yoghurt                                        250 grams

Korma Essence                          1 tsp

Kewra Water                              1 tbsp

Special Spice Mix:

Javitri (Mace)                            3 – 4 flowers

Jaifal (Nutmeg)                        ½

White Cumin Seeds                 1 tsp

Green Cardamom                    6 – 7

Cloves                                        4 – 5

Black Peppercorns                  8 – 10

Cinnamon                                2 – 3 small pieces

Grind these spices in the form of a powder. This is a special spice mix for the beef masala curry.

For Garnishing:

Fresh Mint Leaves                1 Cup

Green Chilies                         8 – 10

Lemon                                    2 (Thinly Sliced)

Tomato                                  2 (Thinly Sliced)

Onion (Crispy Fried)          ½ Cup

Orange Food Color             ½ tsp

Kewra                                    1 tbsp

Biryani Essence                   1 tsp

Method to make Special Shahi Beef Biryani:

Prepare Biryani Rice:

Before you start the cooking, soak the Sella rice in water for around an hour. Now take a deep cooking pot and heat up 1 cup of oil in it. Now add Green Cardamom, Black Cardamom, Cinnamon, Bay Leaves, Curry Leaves, Cloves, Black Peppercorns, Javitri (Mace), Black Cumin Seeds and White Cumin Seeds in the hot oil. Fry them for a minute and add sliced onion. Keep stirring from time to time until onions become translucent and start to become slightly brown. At this point add ginger and garlic paste and fry for 2 minutes while stirring. Add ½ cup of water to avoid burning and now add Green Chili Paste, Fresh Coriander Paste, Mint Paste, Fresh Curry Leaves Paste, Knorr Pulao Cubes, Fennel Seeds Powder, Coriander Seeds Powder and Salt.

Mix all ingredients very well and cover the lid. Cook it until water dries up and oil separates from the spices. Now add soaked sella rice and also add water to boil them. You can measure the water quantity with your finger by dipping it in the water. If there is 1-inch water on the rice surface then it is the right quantity to cook the rice. At this stage, you should not cover the lid. The rice pot should be half-covered and rice should be cooked on medium-high flame. When water dries up, turn off the flame and keep the boiled rice aside.

Prepare Beef Masala Curry:

To prepare beef masala curry for the special shahi beef biryani is easy. Just take a deep cooking pan and add 1 kg beef and around 4 glasses of water in it. Also, add bones. Now add sliced Onion, Ginger Paste, Garlic Paste, Oil, Salt, Chili Powder, Chili Flakes, Coriander Powder and Turmeric Powder. Mix well, cover the lid and let it cook on medium-low flame for around 2 hours. Check when the water dries up and oil separates from the gravy. Also, check the tenderness of the meat. If meat is still not tender then add more water and cook it for more 20 minutes.

Now take a bowl and beat the yoghurt in it. Add fried onions and the special spice mix in the yoghurt. Mix well and add this special mixture into the beef masala curry. Fry the beef for around 8 minutes on medium-high flame. Now add Korma Essence and Kewra Water. Cover the lid and keep it aside. Beef masala curry is ready for the biryani preparation.

Assembling the Special Shahi Beef Biryani:

Take a deep cooking pan and drizzle some oil in the bottom. Now make a layer with the boiled biryani rice. Over the rice, make a bed of beef masala curry and also sprinkle some mint leaves and the fried onion over it. Place some lemon and tomato slices and also whole green chillies. Now make another layer of the boiled rice and garnish them with the mint leaves, green chillies, lemon and tomato slices and fried crispy onion.

At the end take a cup and mix kewra, biryani essence and orange food colour in it. Now pour this orange colour mixture over the biryani and cover the lid properly. Cook it for at least 15 minutes on low flame. Turn off the heat when steam starts to produce inside the cooking pot. Special Shahi Beef Biryani is ready to serve. Just mix it properly with a spatula and serve it with yoghurt and salad.
